OLIVE PECAN SPREAD

INGREDIENTS:

½ lb soft or regular tofu 3 tbsp lemon juice ¼ tsp salt Fold in ¼ cup chopped pecans 5 tbsp sliced pimiento-stuffed olives

METHOD

This makes a good sandwich spread. Spread on crackers for an appetizer. Blend in a food processor or blender until smooth and creamy.

OATMEAL FRUIT SMOOTHIE

INGREDIENTS:

1 frozen banana 1 cup oatmeal (rolled oats) 2 cups water or soy milk or almond milk 1 cup frozen strawberries

METHOD

Blend all ingredients together until smooth.

HUMMUS

INGREDIENTS:

2 cups garbanzo beans, cooked 1 tsp tahini (sesame butter) 1 tsp sesame oil 1 1/2 tbsp lemon juice 1/4 cup parsley, chopped 1/4 tsp garlic powder 1/4 cup green onions, chopped 1/2 cup bell peppers, green, chopped(optional) Garbanzo liquid as needed

METHOD

1. Place all ingredients into a blender and blend until smooth. Add enough liquid to make a thick spread. 2. Serve on toast. Makes: 2 cups

TOFU EGG SALAD

INGREDIENTS:

1 Block Extra Firm Tofu ½ cup Vegan Mayonnaise ½ Cup Carrots, grated ½ cup red onion, diced ¼ cup olives sliced 3 tbsp fresh parsley finely chopped 2 tbsp Nutritional yeast 1 tbsp Dijon Mustard ½ tsp Turmeric 1/8 Tsp Cayenne Salt and pepper to taste

METHOD

1. Drain the tofu. 2. Using a potato smasher or fork, break up the tofu 3. Add all of the remaining ingredients and mix until they are well- Incorporated. 4. Add salt and pepper to taste. 5. Enjoy 

GRAVY

INGREDIENTS:

2 cups hot water ½ cup clean, raw cashews 2 tbsp. cornstarch or arrowroot 2 tbsp. Liquid Aminos 2 tsp. onion powder 1 tsp. food yeast flakes (opt.) ½ tsp. salt ½ tsp. smoked yeast

METHOD

1. Process cashews in about 1 cup of the hot water in a blender until very smooth. 2. Add remaining ingredients and continue blending until. 3. Pour into a saucepan and bring to a boil stirring constantly. 4. Cook until thickened. For variation, omit salt and add 2 teaspoons All-Purpose

MANDARIN ORANGE SALAD

INGREDIENTS:

8 cups mixed salad greens such as romaine, Red leaf, oak leaf, and butter lettuces, Rinsed and Crisped ½ cup chopped walnuts ½ cut jicama, peeled and cut into Long matchstick pieces 2 mandarin oranges, peeled and wedged 1 recipe “Citrus Garlic Salad Dressing” Options: Chopped cilantro, dried cranberries

Citrus Garlic Salad Dressing 1/3 cup orange juice ¼ cup raw cashew pieces, washed 3 tbsp lime juice ¼ tsp liquid aminos(sub soy sauce) 2 pitted dates, chopped ¼ tsp salt 1 clove
