OLIVE PECAN SPREAD
½ lb soft or regular tofu 3 tbsp lemon juice ¼ tsp salt Fold in ¼ cup chopped pecans 5 tbsp sliced pimiento-stuffed olives
This makes a good sandwich spread. Spread on crackers for an appetizer. Blend in a food processor or blender until smooth and creamy.
OATMEAL FRUIT SMOOTHIE
1 frozen banana 1 cup oatmeal (rolled oats) 2 cups water or soy milk or almond milk 1 cup frozen strawberries
Blend all ingredients together until smooth.
2 cups garbanzo beans, cooked 1 tsp tahini (sesame butter) 1 tsp sesame oil 1 1/2 tbsp lemon juice 1/4 cup parsley, chopped 1/4 tsp garlic powder 1/4 cup green onions, chopped 1/2 cup bell peppers, green, chopped(optional) Garbanzo liquid as needed
1. Place all ingredients into a blender and blend until smooth. Add enough liquid to make a thick spread. 2. Serve on toast. Makes: 2 cups
TOFU EGG SALAD
1 Block Extra Firm Tofu ½ cup Vegan Mayonnaise ½ Cup Carrots, grated ½ cup red onion, diced ¼ cup olives sliced 3 tbsp fresh parsley finely chopped 2 tbsp Nutritional yeast 1 tbsp Dijon Mustard ½ tsp Turmeric 1/8 Tsp Cayenne Salt and pepper to taste
1. Drain the tofu. 2. Using a potato smasher or fork, break up the tofu 3. Add all of the remaining ingredients and mix until they are well- Incorporated. 4. Add salt and pepper to taste. 5. Enjoy
2 cups hot water ½ cup clean, raw cashews 2 tbsp. cornstarch or arrowroot 2 tbsp. Liquid Aminos 2 tsp. onion powder 1 tsp. food yeast flakes (opt.) ½ tsp. salt ½ tsp. smoked yeast
1. Process cashews in about 1 cup of the hot water in a blender until very smooth. 2. Add remaining ingredients and continue blending until. 3. Pour into a saucepan and bring to a boil stirring constantly. 4. Cook until thickened. For variation, omit salt and add 2 teaspoons All-Purpose
